Fathers end up behind the camera, which is why the honest Father's Day poster is usually not a poster of him — it is a poster of what he was pointing it at. Pick the photos he took, or the ones he would have.
Search his name in the camera roll and you get nothing.
There is a well-documented gap in every family archive where the father should be. He is not missing because nobody wanted photographs of him; he is missing because he was the one holding the phone. The archive he built is enormous and he is in almost none of it.
Which makes the obvious Father's Day poster — a collage of dad — surprisingly hard to build, and points at the better one. Make the poster out of what he photographed. The kids at the skate park, the dog in the garden, the drive to the coast he insisted on. Handing that back to him, printed, says I noticed what you were looking at, which is a more specific thing to say than most presents manage.
If you do want him in it, the fix is social rather than technical: ask his brother, his mother, or the group chat. There is always one photo of him nobody has seen, and it is usually the best one on the poster.

The photos he took
Go into the year he was most behind the camera and pick his five best. Printing somebody's own photographs is a compliment about their eye, and almost nobody ever receives one.
The people he took them of
The children, at the ages he talks about. A poster of the kids in the year they were small is the version grandparents-to-be end up copying.
The one thing he actually likes
The bike, the boat, the allotment, the band. A poster of the hobby beats a poster of the family for the father who is genuinely happier in the shed, and you know which one he is.
Crowdsource one photo of him
Ask four people for one picture of him each. You will get one from a wedding in 1998 nobody has digitised, and that is the photo the whole poster ends up being about.

Note that Father's Day is not the same date everywhere — it is the first Sunday of September in Australia and New Zealand, and 19 March in much of southern Europe. Count back from your own date using the shipping windows above.
Which layout to pick.
Classic-3 is the version you can finish tonight: three photos, close together, no agonising. It is also the most likely to survive contact with a man who claims not to want anything.

How many photos do I need?
Three at minimum, twenty at most. Three is enough for a print he will actually hang; five suits a summer or a single trip; eight works when more than one child has a claim on the wall.
